Rabbit Island
2020.6.1
Yamada Nishiki rice is milled to an extravagant 40%, then slowly and carefully brewed through low-temperature fermentation to produce this masterful Daiginjo. Enjoy chilled for a bright dryness and even richer flavor, or serve warm to bring out the lush aroma distinctive of a Daiginjo. Each sip reveals the depths of this exceptionally crisp, dry sake.
The name "Kokushimuso" was taken from "Shiji" ("Records of the Grand Historian) a work by Han Dynasty official Sima Qian.
